This is a classic. I serve this with frozen yogurt instead of ice cream because I like the tanginess of the yogurt with the sweet, syrupy cherries. Use any variety of cherries you want–sweet or sour.
Serves 4 to 6
2 cups pitted cherries (about 10 ounces), plus extra for garnish
¾ cup dry white wine
½ cup firmly packed light brown sugar
Juice of 1 orange
2 tablespoons brandy or bourbon
1 pint vanilla frozen yogurt
1. Combine the cherries, wine, sugar, orange juice, and brandy in a small saucepan and bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for about 20 minutes, stirring occasionally, until the sauce thickens to a syrupy consistence. Remove from the heat and set aside for about 10-15 minutes, to cool slightly.
2. To serve, divide the yogurt into four to six dessert bowls and spoon the warm sauce and cherries over it. Top each serving with a few fresh cherries, and serve.
