Cuban Turkey Burgers
Makes 4 burgers
1 pound ground turkey breast
1 teaspoon granulated garlic
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 tablespoon orange juice
½ lime, juiced
2 tablespoons cilantro, chopped
safflower or canola oil for oiling the grill grates
4 whole-wheat buns hamburger buns
accompaniments: lettuce, sliced red onion, sliced and cored tomato, Swiss cheese, yellow mustard, pickles
1.Prepare a hot fire in a charcoal or gas grill. (Or just before you’re ready to cook the burgers, heat a grill pan or cast iron skillet over medium-high heat until it’s hot.)
2. Combine the turkey, granulated garlic, cumin, black pepper, red pepper flakes, orange juice, lime juice, and cilantro in a large bowl and work the mixture with your hands just to mix. (Do not over mix or the burgers will be tough.) Form the meat mixture into four 1-inch-thick patties.
3. Grill patties for 5 to 6 minutes per side, or until they’re just done. Remove the patties to a platter, cover them loosely with foil to keep warm, and set them aside to rest for about 5 minutes.
4. Place the buns cut-side down on the grill (or in the grill pan or toaster) for 30 to 45 seconds to toast lightly.
5. To assemble the burgers, lay a couple tomato slices, red onion and lettuce on the bottom of each bun and place the burgers on top. Top each burger with 1 slice of Swiss cheese.
