Foster’s Pimiento Cheese Spread

This is a sophisticated spread that can be used for party hors d’oevres or sandwiches

Makes about 4 cups spread

1 cups (4 ounces) grated Cheddar cheese
1 1/2 cups (6 ounces) grated Parmesan cheese
1 cup (4 ounces)grated smoked Gouda cheese
1 rosted red bell pepper, peeled cored, seeded and chopped
1 roasted green bell pepper, peeled cored, seeded and chopped
1 cup good-quality mayonnaise
1 jalapeno, seeded and minced
1 tablespoon cider vinegar
1 tablespoon honey
1 teaspoon salt
1 teaspoon freshly ground black pepper

1. Mix together the Cheddar, Parmesan, Gouda, roasted red bell pepper, and roasted green bell pepper in a large bowl.

2. In a separate bowl, combine the mayonnaise, jalapeno, vinegar, honey, salt, and pepper and stir to blend well.

3. Stir the mayonnaise mixture into the cheese mixture and mix well. Season with additional salt and pepper if desired. Refrigerate in an airtight container until ready to use or up to 1 week.
