This frosting is best used the day it is made.
Makes about 4 cups
2 large egg whites
1 1/2 cups sugar
1/4 cup cold water
1 tablespoon light corn syrup
1 teaspoon pure vanilla extract
1. Combine the egg whites, sugar, water and corn syrup in the top of a double boiler over simmering water.
2. Beat the mixture with a hand held mixer 3 to 4 minutes on low speed. Increase the speed to high and beat 3 to 4 minutes longer until the icing is shiny and forms soft peaks.
3. Remove from the heat and add the vanilla and continue to whip on high speed about 1 to 2 minutes more until the frosting becomes thick. Spread on the cake immediately before it becomes crusty.
